Lentil and Rice Pilaf

Ingredients (serves 4 to 5):
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 3/4 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 4 cups chicken stock
  • salt
  • 1 cup dried lentils, rinsed
  • 1 cup long grain white rice (or 2 c short grain)
  • 1 tsp red pepper flakes (optional)
Directions:
  1. Heat oil in large saucepan over medium-high heat.
  2. Add chopped onion, garlic cloves, cumin, cinnamon, pepper flakes (optional) and allspice, sauté until onion softens, about 4 minutes.
  3. Add stock and lentils, bring to boil.
  4. Reduce heat to medium-low and simmer, covered, 10 minutes.
  5. Stir in rice; return to boil.
  6. Reduce heat to medium-low; cover and cook until liquid is absorbed and rice and lentils are tender, about 15 minutes longer.
Season pilaf to taste with salt and pepper.
