Escalloped Potatoes

  • 6 potato
  • 1 onion, chopped
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1 1/2 cups skim milk, scalded
  • 1 tablespoon margarine (used to be 2)
Wash potatoes, pare and slice thin (disk 1).  Combine flour and salt.  Arrange thin layer of potatoes and onion in bottom of greased baking dish. Sprinkle with 1/2 of the flour-salt, layer with potatoes and onion, sprinkle with rest of flour-salt. Arrange another layer of potatoes and onion.  Dot with butter. Pour scalded milk over all.
Cover with foil and bake at 375F for 45 minutes. Uncover and bake 15-30 minutes longer.
